Alkar beefs up compliance, cooks meat with RFID

ALKAR-RapidPak Inc., the food processing equipment firm, has teamed up with Matrix Product Development to install an RFID-based wireless temperature monitoring system to decrease raw material waste and improve regulatory compliance.
As part of the installation, Matrix Product Develop has deployed its Wyze-Temp solution. An RFID-based temperature tag is attached to meat as it passes down the oven’s conveyor belt. From inside of the oven the tag communicates real-time temperature information that can be analyzed on the spot. If temperatures deviate from the specified range, an alarm is triggered.
The system allows for temperatures to be adjusted fast and easy, ensuring thousands of pounds of meat are not improperly cooked and ruined. Labor costs are reduced as employees no longer have to continuously open and close large oven doors to take readings through the day.
This Wyze-Temp system also helps Alkar stay compliant to the regulations enforced by the U.S. Department of Agriculture (USDA). The system enables Alkar to ensure incidents do not occur which could lead to E-Coli or other sickening food-borne illnesses.
